Ingredients
- 3 lb. chicken
- 1 bunch leeks (about 3), chopped
- 12 prunes
- 2 sprigs parsley
- salt and pepper
Directions
- Cover the chicken in water and simmer in a covered pot for 2 - 3 hours.
- Remove chicken, separate meat from bones, and return meat to pot.
- Add leeks, prunes, parsley, salt, and pepper.
- Simmer another 45 minutes.
Serves 6.
