Cock-A-Leekie

Directions

  1. Cover the chicken in water and simmer in a covered pot for 2 - 3 hours.
  2. Remove chicken, separate meat from bones, and return meat to pot.
  3. Add leeks, prunes, parsley, salt, and pepper.
  4. Simmer another 45 minutes.

Serves 6.
